Ingredients
- 2 cups grated zucchini
- 1/2 cup grated romano cheese
- 1/2 cup freshly chopped parsley
- 2 eggs beaten
- 1 teaspoon salt
- Dash of pepper
- 3/4 to 1 c flour
- 1 teaspoon oil
Instructions

Mix all ingredients except flour and oil. Then gradually add flour and finally oil.

Drop by teaspoonful into preheated pan with vegetable or olive oil. Lightly fry on both sides until golden brown.
