Carrot Bread

Ingredients

  • 2 cups grated carrots
  • 1 1/3 cups sugar
  • 1 1/3 cups water
  • 1 cup raisins
  • 1/3 cup butter or margarine
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/ 2 tsp salt
  • 1/ 2 tsp cloves
  • 1/ 2 tsp allspice
  • 1 teaspoon nutmeg 1 tsp cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts

Instructions

  1. Combine first five ingredients in a pot and boil gently for 5 minutes. Remove from heat and stir in remaining ingredients. Pour batter into two standard loaf pans, sprayed with cooking spray.
  2. Bake in a 350° oven for 1 hour or until knife inserted in center comes out clean. Allow to cool on a wire rack. Slice and serve plain, with butter, peanut butter, apple butter or cream cheese.
