Buttermilk Griddle Cakes

Ingredients

  • 1 cup buttermilk
  • ½ cup sweet cream
  • 1 egg, well beaten
  • 2 tbsp cornmeal
  • 1 tbsp butter, melted
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups flour
  • Butter and maple syrup for topping

Instructions

  1. Mix ingredients in order given (excluding topping butter and maple syrup). Drop by spoonfuls on a greased hot griddle.
  2. Cook on one side and when puffed, full of bubbles and well cooked on edges, turn and cook on other side. Serve with butter and maple syrup.
