Fill Pitchers with Winter Citrus Spritzer

If youre lucky, youre seeing beautiful winter citrus beginning to pop up at the markets. Its like nature knows we need a bit of brightness in the winter. A little sunshine in fruit form. This cocktail is perfect for New Years Eve. Im not a big party-goer on New Years. I usually like to stick close to home or head to a friends house for a chill dinner with a small group. This year, Im opting for the later and Ive been on the lookout for a cocktail that I can make quickly and one that wont leave me hammered before midnight. If youve never had Aperol, youre in for a treat. It falls in the category of an aperitif.
You can drink it on its own, much like you would with Lillet (one of my favorites), but I usually like to mix it with ingredients to make it a bit more interesting. In this instance I juiced a few cara cara oranges, mixed in a bit of Aperol and finished it with a healthy pour of Cava (Spanish champagne). Its refreshing, goes down easy and its pretty easy on the eyesthat color!
