Every year when Christmas day rolls around, I get super excited about what Im going to make for breakfast. I want it to be easy, easy but warm and comforting. I usually always make a mix of things. Theres usually French toast, cinnamon rolls and a few savory things like bacon and eggs. This baked oatmeal dish is always something that I want to add to the mix because its not too too sweet and its always a crowd-pleaser.
The apples and cranberries are super of-the-season, but in the past Ive added frozen berries or diced persimmon. It really works with so many things. You can even make this the night before and reheat it the morning of. And when the new year rolls around and you want to make it healthier, you can scale down the sugar (Ive replaced it with honey), add different types of fruit or even add quinoa instead of oats. Its a super versatile breakfast that feels homey and comforting.
