Baking with my kids is one of my favorite ways to spend time together, especially with my 7 year old son. Hes still young enough where he loves to help in the kitchen, from cracking the eggs to using my stand-mixer, almost all by himself.
With two busy teenaged daughters, when they bake in the kitchen its usually without my help, which I've decided is better. They get to learn from many trials just like I did, and I get to watch them develop their skills from afar.
It wont be long before Eli won't want my help and will want to try things on his own too. Time with my kids goes by so fast, so Im enjoying every single minute with him while I can.
One of my goals this year is to bake in small-batches when the occasion arises. Now in my forties, my hips cannot afford to have any leftover dessert taunting me to eat it the next day. Whether its a single cookie per person or a small serving of cheesecake ( I baked a 5 inch cheesecake last week!), Im definitely a fan of small batch baking.
Today I have a Double Chocolate Walnut Brownie recipe for you baked in a loaf pan. The brownies are rich and fudgy with a slight noticeable chew around the edge pieces. You can cut it into 8 small 2x2-inch pieces or 6 bigger 3x2-inch servings. Of course the recipe can be doubled, but once you go small-batch, youll never go back.
