This creamy seafood risotto is one of my favorite spotlight meals to make. I say spotlight because it sounds difficult and fancy but its actually quite simple once youve gotten all your ingredients prepped and ready to go.

This risotto is full of delicious crab, shrimp and scallops. It may sound strange to combine seafood and cheese, but I assure you it works just fine here. I love to serve this at casual dinner parties with plenty of crusty bread and Chardonnay to go around. Its a delicious twist on everyday risotto!
