Kick Up the Heat with Salsa Verde Enchiladas

If you dont know what to cook for people, the answer is always enchiladas. Its always a crowd-pleaser because there arent many people in the world who hate flavorful salsa, tortillas and cheese. Even my good friend, Lara, a hater of dogs and Mexican food loved these.
These are veggie-filled with sautéed summer squash and zucchini and corn, and topped with some of my favorite salsa ever. If for some reason, youre not feeling enchiladas, just make the salsa verde. I had to stop myself from eating the entire batch of salsa by itself with the big bag of tortilla chips I had purchased at the store.
I noted below that you should only use a whole jalapeño if you love heat. I looooove spicy salsa. I love heat that challenges me. It makes me want to eat it over and over. These enchiladas are simple in its flavors but as the saying goes, the secret is in sauce. The homemade salsa verde makes these really special.
Also, if youre feeling for something more meat-heavy, feel free to fill them with roasted chicken, pork or beef. Enchiladas are versatile in that way; make them yours.
