Make Oat Ginger Rhubarb Crumble

Rhubarb is like springs unicorn. Or at least it feels like that in California. Rhubarb loves drafty, rainy weather. And LA is not that. It was supposed to be this year but El Nino failed us, unfortunately.
So when I finally found rhubarb last week, I bought a lot of it. And by a lot I mean about 8 pounds. But dont worry, I made good use of it. There was a rhubarb upside down cake, rhubarb vodka, this crumble and rhubarb pie.
Ill take all the rhubarb!
This crumble is really simple. The ginger is really pleasant and the cinnamon and oats in the topping make it still feel warm and cozy. Its not summer yet; we still need our ovens.
