Celebrate Summer With Corn and Chorizo Hash

Breakfast is my favorite meal, especially when I eat it for lunch time, late lunch time or dinner time. Basically, I prefer eating breakfast at any other time besides mornings. Hashes are nimble; they can easily fit in to another meal category. It's because they offer leniency when it comes to ingredients, preparation and they're savory. They're easy-breezy.
This hash is all about celebrating summer. I used these beautiful, very small waxy potatoes, some spicy chorizo and freshly cut kernels off the cobs. A little garlic, shallot and green onion add some nice flavor, as does the sweet paprika.
The runny egg on top is like icing on the cake because I really do believe everything is better with a runny egg on top.
