The Year of Cozy: Classic Peach Pie

I wrote a book! Its called The Year of Cozy and it comes from my home to yours. The book is driven by the idea that sometimes we cant really control the larger things in life, but we can most certainly decide how we spend our free time. Its about living with a bit of intention and choosing to spend our time making things that bring us happiness. For me, cooking is the place where I love to lose myself. Theres nothing more that brings me more joy than baking and cooking and crafting.
The book is full of 125 recipes, crafts and other homemade adventures. It is structured by season, starting with my favorite of them all: autumn. In those four chapters, youll find it divided by month, providing inspiration for the entire year. If you know me, then you know I love two things: dogs (specifically corgis) and pies. So, today Im sharing one of my favorite summer recipes: Classic Peach Pie.
During this time of year, peaches dont need much. A bit of brown sugar, white sugar, bourbon, salt and tapioca starch. If you dont have tapioca starch, you can use corn starch (I would just divide it by half, so 2 tablespoons). The bourbon isnt overpowering, its subtle and works wonders with the peaches and brown sugar.
The pie crust is my favorite. Its a teeny bit sweet and the salt is wonderful against the fat from the butter. Its flakey and when topped with a bit of egg wash and turbinado sugar, its beautiful, too.
