When it comes to breakfast, I am a pancake girl. As much as I love scrambled eggs and bacon, theres just something so wonderful about a big stack of fluffy pancakes with maple syrup.

And guess what? They are so easy to make! Theyd be perfect for a Thanksgiving morning breakfast or just a laid-back Saturday.
Ive realized the secret to great, fluffy pancakes is not over-mixing the batter and cooking on a very hot skillet. Fleck some water on your skillet before dropping the batter. If the water sizzles, the skillet is ready for use. Cooking on a skillet thats not hot enough results in uneven cooking.
