Sumac Sauce

Ingredients

  • 1 small yellow onion, diced
  • 1 clove garlic, minced
  • 1 sprig of thyme
  • 1 dried bay leaf
  • ¼ cup ground sumac
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 cup water or chicken stock

Instructions

  1. Combine diced onion, minced garlic, thyme, bay leaf, salt, and pepper in saucepan.
  2. Add a few drops of water, and steam and sweat the ingredients.
  3. Add the sumac, and toast for a few minutes.
  4. Cover with water or chicken stock and bring to boil.
  5. Reduce the heat and simmer for about 10 minutes.
  6. Remove the bay leaf and thyme sprig before serving.
