Ingredients

  • 2 cups salsa verde
  • 1-1/2 lb. shrimp, peeled and deveined
  • 1/4 cup butter
  • 2 Tbs. olive oil
  • 1 cup cilantro, finely chopped

Instructions

  1. Prepare salsa verde.
  2. Sauté the shrimp in butter and olive oil for no more than one minute per side over low heat. (Overcooked shrimp gets dry and hard.)
  3. Add salsa verde so the shrimp finish cooking in the salsa; turn off the heat.
  4. Top with cilantro.
