Rocky Mashed Potatoes & String Beans

In her special, “Lidia Celebrates America: Changemakers,”, Lidia meets Nicole Steele, who works to improve access to healthy foods in Inglewood, CA, by delivering free produce to pop-up markets, schools, and clinics. Every Friday, the Social Justice Learning Institute (SJLI) distributes up to 15,000 pounds of fresh produce to food banks, non-profits, individuals, etc. Lidia eagerly helps out, even creating her own recipes to include in the giveaways, including this one, from Lidia’s Italy, for Rocky Mashed Potatoes & String Beans.
Ingredients
- 2 medium to large Idaho potatoes (about 1 pound peeled)
- 2 quarts salted water
- 1 pound fresh string beans, trimmed
- 3 tablespoons extra virgin olive oil
- 4 garlic cloves, peeled and sliced
- Freshly ground pepper
Instructions

Combine the potatoes and salted water in a large saucepan. Bring to a boil and cook 20 minutes. Add the beans and cook until the potatoes are tender but still firm and the beans are tender, about 7 minutes. Drain the vegetables in a colander.

In a large, dee[ skillet, heat the olive oil over medium heat. Add the garlic and cook until golden, about 1 minute

Add the potatoes and string beans and season them with salt and pepper.

Cook the vegetables, mashing the potatoes roughly, as you stir them with the beans, until the vegetables are mixed.

Season to taste with salt and pepper and serve hot.
