- 2 tablespoons unsalted butter, divided
- 1 cup sugar
- ¼ cup water
- ¼ cup light corn syrup
- 1½ cups macadamia nuts, roughly chopped
- ¼ teaspoon baking soda
- Sea salt to taste

Grease a rimmed baking sheet with 1 tablespoon of the butter.

In a large nonstick saucepan, combine the sugar, water, and corn syrup. Cook over medium-high heat, stirring occasionally, until golden brown, 4–6 minutes.

Add the macadamia nuts and continue cooking until the mixture turns a medium-brown color, 2–3 minutes. Remove from the heat, quickly add the baking soda and remaining 1 tablespoon butter, and stir carefully until completely incorporated. Quickly pour the brittle onto the prepared baking sheet, sprinkle with salt, and let cool.

Break the cooled brittle into pieces. Keep in an airtight container until ready to serve.
