Ingredients
- 2 packages jiffy corn muffin mix
- 1 11 ounce can of mexicorn
- 1/2 cup whole milk
- 2 whole eggs beaten
- 1/2 cup yellow onions minced fine
- 1/3 cup jalapeno peppers minced fine
- 1 tablespoon garlic minced fine

Preheat oven to 400 degrees

Blend ingredients and let stand 5 minutes

Fill muffin cups or greased tins ½ full and bake until done, about 15 to 20 minutes
