Ingredients

  • 2 packages jiffy corn muffin mix
  • 1 11 ounce can of mexicorn
  • 1/2 cup whole milk
  • 2 whole eggs beaten
  • 1/2 cup yellow onions minced fine
  • 1/3 cup jalapeno peppers minced fine
  • 1 tablespoon garlic minced fine

Instructions

  1. Preheat oven to 400 degrees
  2. Blend ingredients and let stand 5 minutes
  3. Fill muffin cups or greased tins ½ full and bake until done, about 15 to 20 minutes
