Ingredients

  • 1 lb. mussels (Prince Edward Island)
  • 4 tomatoes canned peeled Italian Plum
  • 1 teaspoon chopped garlic
  • 1 teaspoon chopped parsley
  • 1 cup white wine
  • salt and pepper
  • 1 tbl olive oil

Instructions

  1. Heat oil in large skillet, add mussels and stir
  2. Add garlic and parsley and stir
  3. Add white wine, bring to simmer
  4. Add tomatoes, crush by hand and simmer until all mussels are open
  5. Season with salt and pepper
