Classic Caesar Salad

Ingredients
- 1 head romaine lettuce
- 1 teaspoon Dijon mustard
- 2 anchovies
- 2 crushed garlic cloves
- 3/4 teaspoons salt
- 2 cups oil
- 1/4 teaspoon black pepper
- 1/4 teaspoon white pepper
- 1/4 cup vinegar
- juice of 1/4 lemon
- 1 teaspoon Worcestershire sauce
- dash Tabasco
- 2 eggs
Instructions

Wash and dry romaine and chill.

Place garlic, anchovies in processor, add salt, vinegar, eggs, mustard, Worcestershire sauce, Tabasco and process lightly.

With processor running, add oil - 1 drop at a time then trickle until all oil is added.

Add lemon, pepper and process again. Coat lettuce with Parmesan, add dressing, then croutons.

Serve immediately.
