Chicken Chapli Kebabs with Yogurt Mint Sauce

"Chicken chapli kebabs originate from the Mughals of northern Pakistan and are a popular street food throughout Southeast Asia. When most of us think of kebabs, skewered beef or lamb is what comes to mind, but chicken chapli kebabs are a little different—a difference that is described in the name. Chapli derives from the Pashto word for "flat." These patties are made of heavily spiced ground chicken, fried on all sides. The kebabs can be enjoyed on their own with an array of raw veggies and a yogurt mint sauce or rolled into warm pita or naan with lettuce and tomatoes." -- Salmah

Ingredients
- 1½ pounds ground chicken
- 1 small yellow onion, roughly chopped
- 5 garlic cloves, peeled
- ½-inch piece ginger
- 3 green chiles
- 1 tomato, roughly chopped
- ¼ cup roughly chopped fresh mint
- ¼ cup roughly chopped fresh cilantro
- 3 tablespoons pomegranate molasses
- 2 tablespoons ground cumin
- 4 teaspoons salt
- 4 teaspoons ground black pepper
- 1 tablespoon garam masala
- 1 tablespoon fennel seeds
- 1 teaspoon coriander seeds
- 3 tablespoons chickpea flour (besan)
- 1 large egg, beaten
- 2 tablespoons vegetable oil
For the Yogurt Mint Sauce:
- 1 cup plain yogurt
- Juice of 1 lemon
- ¼ cup fresh cilantro
- ½ cup fresh mint
- ½ cucumber
- 1 green chile
- Salt and ground black pepper to taste
Instructions

In a food processor, combine all the ingredients except the oil and pulse until just combined.

Form the mixture into 10 small patties, place on a plate, and refrigerate for 10 minutes.

Heat the oil in a large skillet over medium-high heat. Working in batches, fry the patties until cooked through, 5–8 minutes per side. Transfer the cooked patties to a wire rack to drain.

Serve with the yogurt mint sauce.

For the Mint Sauce: Combine all the ingredients in a small food processor and blend until smooth.
