Blue Cheese Butter

Ingredients

  • 1 lb. butter
  • 1/4 cup shallots – peeled & diced
  • 1 lb. stilton blue cheese
  • 2 teaspoons black pepper
  • 2 teaspoons kosher salt
  • 1/4 cup white wine or lemon juice

Instructions

  1. Slowly cook shallots in butter (no Color)
  2. Add wine – reduce till dry
  3. Mix ingredients in mixer or in bowl until well mixed
  4. Adjust seasonings
