Ingredients
- 12 (3/4 - inch) slices day old French bread (from long thin loaf)
- 1 package (10-ounce) frozen asparagus cuts cooked and drained
- 2 cups skim milk
- 2 eggs (whole)
- 4 egg whites
- 3 tablespoons lemon juice
- 1/4 cup fresh onion chopped
- 1 clove garlic minced
Instructions

Arrange six bread slices on bottom of lightly greased 9x12 baking dish. Evenly spoon asparagus over bread. Top with remaining bread slices. In a medium bowl, beat eggs and egg whites. Add remaining ingredients and beat until evenly blended. Pour over bread. Cover and refrigerate several hours or overnight. Un-cover and bake in a pre-heated 350° F oven. Bake until golden brown and puffed and a knife inserted in the center comes out clean—approximately 40 minutes. Sprinkle with pepper or parmesan cheese if desired.
