Ingredients

  • Ingredients:
  • 6 ounces Ahi Tuna Sashimi grade
  • 2 each baby bok choy
  • olive oil
  • salt
  • black pepper
  • mint-lemon ermolata (recipe follows)
  • hummus (recipe follows)
  • baby greens
  • Ermolata:
  • 2 sprigs chopped mint
  • lemon zest chopped ¼ lemon
  • 1/4 cup extra virgin olive oil
  • salt
  • black pepper
  • sliced almonds
  • Hummus:
  • 1 cup garbanzo beans
  • 1/2 shallot chopped
  • 1 clove garlic
  • 1/2 cup extra virgin olive oil
  • water to thin
  • salt
  • black pepper
  • 2 Tablespoons lemon juice
  • 1 sprig thyme-picked

Instructions

  1. For Ermolata: Mix everything in bowl, adjust seasoning
  2. Put all ingredients into food processor, puree until smooth.
  3. Adjust seasoning, use water to thin out puree to a thick sauce consistency.
