- Ingredients:
- 6 ounces Ahi Tuna Sashimi grade
- 2 each baby bok choy
- olive oil
- salt
- black pepper
- mint-lemon ermolata (recipe follows)
- hummus (recipe follows)
- baby greens
- Ermolata:
- 2 sprigs chopped mint
- lemon zest chopped ¼ lemon
- 1/4 cup extra virgin olive oil
- salt
- black pepper
- sliced almonds
- Hummus:
- 1 cup garbanzo beans
- 1/2 shallot chopped
- 1 clove garlic
- 1/2 cup extra virgin olive oil
- water to thin
- salt
- black pepper
- 2 Tablespoons lemon juice
- 1 sprig thyme-picked

For Ermolata: Mix everything in bowl, adjust seasoning

Put all ingredients into food processor, puree until smooth.

Adjust seasoning, use water to thin out puree to a thick sauce consistency.
